Fancy Noodles

Fancy Noodles has become a staple in the Smith household. This "house style" Ramen Noodle recipe is one of our favorites! It's a low cost, perfect for re-purposing leftover meat, reminds us of "take-out", and is simple to make. By far, the best part? The simple yet super flavorful sauce! Make oodles and noodles at home even better and healthier without that salt packet.

Check out the video below of us making this recipe. Sorry, the video is a bit choppy, I accidentally erased a few clips and I was NOT about to re-film the whole thing so....

Pro Tips to Remember: Remove the noodles from the water, drain, and IMMEDIATELY add to sauce and meat mixture. This pasta doesn't act like spaghetti, it will get gummy. You can add any meat you'd like. We eat this "house style" which is typically 2-3 different meats. You only need 1 lb total, this allows you to stretch your meats.
Sauce recipe is a start, add more and less of the ingredients your family loves. We love the garlic-spice component!

Grocery List

  • 2 Cloves Garlic or 2 Tbsp of garlic paste

  • Broccoli (frozen works great)

  • Shredded Cabbage (coleslaw mix bag)

  • Mushrooms

  • Green Onions - optional garnish

  • 1/4 cup Soy sauce** (low sodium is best)

  • 3 tsp Sriracha** (hot sauce works too)

  • 1 tsp ginger paste

  • Packaged Lo-Mein Noodles (you can use Ramen noodles too, adjust cooking times)

Baking & Spices

  • 1 tsp Brown sugar

  • 2 tsp Sesame oil (olive oil works great)

Let's Cook!

  • Whisk together sauce: soy sauce, brown sugar, ginger, and sriracha until combined. Set aside.

  • Heat the sesame oil in a small skillet or saucepan over medium heat.

  • Cook the garlic, continually stirring, for 1-2 minutes or until translucent.

  • Add meat of choice to skillet. Cook.

  • Add broccoli and mushrooms as meat finishes.

  • Remove the pan from the heat. Immediately add noodles and sauce.

  • Mix all together, tongs work great. Toss the noodles with the sauce.

  • Add fresh cabbage, the heat will wilt, yet leave crunch.

  • Garnish with green onions if desired.

Final Notes:

-Adjust sriracha can to the desired level of heat. -We used low sodium soy sauce for this recipe. If your soy sauce is not low sodium, please adjust to taste. -This recipe serves four most of the boys eat it so fast there are never leftovers. LOL!

-Missing some spices? Dig in your sauce packet drawer or hit your local restaurant for some packets of free flavor <3

-Pairs great as main dish but can be a wonderful side to egg rolls and chicken wings. Yum!
